In 1662 he presented the Royal Society with a paper called Some Observations concerning the Ordering of Wines[1] in which he detailed the secondary fermentation of wine in order to create sparkling wine.[2] This was done over 30 years prior to the work of Dom Perignon[2] who is generally considered the inventor of Champagne, the famous sparkling wine made in the Champagne region of France.
